MOIST CHOCOLATE CAKE

INGREDIENTS:

2 C flour

 

2 C sugar

 

1 t salt

 

1 C vegetable oil

 

2 t baking soda

 

1 C HOT coffee

 

1 t baking powder

 

1 C milk **

 

¾ C cocoa

 

2 eggs

 

1 t vanilla

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

INSTRUCTIONS:

Sift together dry ingredients in medium mixing bowl. Add oil, coffee, and milk. Mix at medium speed for two minutes. Add eggs and vanilla, beat for two more minutes. (Batter will be thin) Pour into greased and floured cake pan. Bake at 350 F. for 25 – 30 minutes.

 

You may put in 9 x 13 pan or make a bunt cake, or make a layered cake.

 

 

 

** You may substitute one cup buttermilk for the milk, this makes it even moister.
